Taco Salad (Hold the Taco)


Taco Salad. It’s one of my favourite meals. For several reasons, really. The first, it’s tasty. Second, it’s easy. Third, did I mention it’s tasty??

Ingredients

  • Extra lean ground beef, or ground turkey or ground chicken (1lb is fine) – go for grass fed if possible.
  • Romaine lettuce
  • Cheddar cheese
  • Salsa (mild, medium or hot – however you like it)
  • 1 bell pepper – red, green or purple
Prep

  1. In a medium or large non-stick skillet, fry up the ground beef (or whatever).  Here you can also add some chili powder, pepper or other spice.  I also like oregano for some reason.
  2. While beef is frying, wash and chop up a head of the romaine lettuce.
  3. Chop up half of the bell pepper into small slices and add to lettuce.
  4. When beef is done, place a liberal amount on your lettuce.  Save the rest for the next day and possibly the next day after that.  Trust me, taco salad is one of the few meals that doesn’t get old.
  5. Grate some cheddar cheese onto the mix.
  6. Add some a couple tablepoons of salsa and a tablespoon of light sour cream.

And that’s it.  Grab a fork and go to town.
